Red Velvet Cake Mix Cookies

Red velvet cake cookies bring all the flavor of the beloved cake into a handheld treat with soft, chewy centers and a vibrant crimson-red finish. This recipe for red velvet cake cookies delivers rich cocoa notes and a melt-in-your-mouth texture with beautifully crackled tops in every bite. Quick to make and impossible to resist, they are destined to become a repeat favorite.

Ingredients
  

  • 15.25 oz Red velvet cake mix 1 box
  • 2 Large eggs
  • 1/3 cup Vegetable oil
  • 1 cup White Chocolate Chips
  • Red food coloring optional

Instructions
 

  • Preheat oven to 350F
  • In a mixing bowl add the cake mix, ⅓ cup oil, and two eggs.  With a hand mixer or stand mixer, beat to fully combine.  You can add red food coloring depending on how red your cake mix is (a couple drops at a time).  I didn’t need to add any to my recipe.
  • Stir in white chocolate chips by hand.
  • Use a 2 tablespoon cookie scoop to portion out cookies onto a parchment paper lined baking tray, leave a couple inches between cookies to allow for spreading.  If you don’t have a cookie scoop, you can spoon drop them as well.
  • Bake in the oven for 15-17 minutes.  The cookies will still look moist but they will firm up with cooling.
  • Allow to cool on a cooling rack for at least 5 minutes.
  • Enjoy

Notes

  1. A stand mixer can be used instead of a hand mixer, and if you have neither you can also use a spoon to mix the batter thoroughly.
  2. Batter can be portioned out immediately once mixed, no need to cool in the fridge.
  3. Different brands of red velvet cake mix will have different levels of red color, feel free to add some red food coloring if you would like the batter to be more red.  I would add a few drops after/during mixing of the oil and eggs into the cake mix
 

FAQs

How long will these red velvet cookies last? The cookies can be stored in an airtight container on the counter for about three days, or place the container in the fridge and they will stay fresh for five days. If you prefer, the cookies can be frozen in an air tight zipper top bag or container for up to three months. They only need about 5-10 minutes on the counter to thaw before eating.
My cake mix isn’t exactly 15.25oz, what should I do? This recipe should work if your cake mix is within a couple of oz’s. If it is a lot more or a lot less you will need to adjust the oil and eggs accordingly.
What mix-ins go well with red velvet cake cookies? White chocolate and or cream cheese chips taste and look great in these cookies. You could also use milk and dark chocolate chips, pecans are also a winner with red velvet.
Can I make these into cookie sandwiches? For sure. Try piping cream cheese frosting between two cookies for a decadent treat.
