OK, I have to admit, I don't normally make cookies or cakes from cake mixes, but this one intrigued me and I wanted to see what the texture would be like using a cake mix. I was very pleasantly surprised. I do like the red cookie look, with the white chocolate chips - it has a Valentines vibe, but really is suitable any time of year.

Ingredients for Red Velvet Cake Cookies

Red Velvet Cake Mix (15.25oz box) - the base for the cookie batter. It should already have red food coloring in it.

Eggs - added to bring moisture and some leavening to the cookies.

Vegetable Oil - adds moisture and softness to the cookies

White chocolate chips - adds sweetness and a beautiful color contrast to the red cookie

Red food coloring - can be added if your cake mix isn't red enough for your liking. I did not need to add any to mine.

How To Make Red Velvet Cake Mix Cookies

Full measurements and instructions are in the recipe card at the bottom

Preheat oven to 350F

In a mixing bowl add the cake mix, oil, and two eggs.  With a hand mixer or stand mixer, beat to fully combine.  You can add red food coloring depending on how red your cake mix is.  I didn't need to add any to my recipe.

Stir in white chocolate chips by hand.

Use a 2 tablespoon cookie scoop to portion out cookies onto a parchment paper lined baking tray, leave a couple inches between cookies to allow for spreading.  If you don't have a cookie scoop, you can spoon drop them as well.

Bake in the oven for 15-17 minutes.  The cookies will still look moist but they will firm up with cooling.

Notes

  1. A stand mixer can be used instead of a hand mixer, and if you have neither you can also use a spoon to mix the batter thoroughly.
  2. Batter can be portioned out immediately once mixed, no need to cool in the fridge.
  3. Different brands of red velvet cake mix will have different levels of red color, feel free to add some red food coloring if you would like the batter to be more red.  I would add a few drops after/during mixing of the oil and eggs into the cake mix.

The cookies can be stored in an airtight container on the counter for about three days, or place the container in the fridge and they will stay fresh for five days. If you prefer, the cookies can be frozen in an air tight zipper top bag or container for up to three months. They only need about 5-10 minutes on the counter to thaw before eating.

My cake mix isn't exactly 15.25oz, what should I do? This recipe should work if your cake mix is within a couple of oz's. If it is a lot more or a lot less you will need to adjust the oil and eggs accordingly.

What mix-ins go well with red velvet cake cookies? White chocolate and or cream cheese chips taste and look great in these cookies. You could also use milk and dark chocolate chips, pecans are also a winner with red velvet.

Can I make these into cookie sandwiches? For sure. Try piping cream cheese frosting between two cookies for a decadent treat.

  • cup Vegetable oil
  • 1 cup White Chocolate Chips
