- Chili Flakes For a little more heat (optional)

Peel and cut carrots on the diagonal in ¾” chunks or 1”? Set aside.
Melt butter in a large mixing bowl in the microwave for abut 15 seconds. Add in the hot honey, and all the seasonings. Mix with a spoon.
Add in the cut carrots and coat all the carrots evenly with the butter/hot honey seasoning.
Dump coated carrots onto prepared baking sheet. Spread carrots out so that they aren’t too close together. Roast in oven for 20 minutes, stirring and flipping them about halfway through.
Finish off under the broiler for 5 minutes to get that crispy char. Keep an eye on them under the broiler as they can burn very quickly.

- Feel free to drizzle a little extra hot honey over the roasted carrots in the serving bowl if you like.
- Add a little richness by crumbling in some feta cheese or goat cheese after roasting.
- Prefer a simpler flavor? Just stick with salt, pepper, and hot honey, and skip the additional seasonings for a more carrot-forward dish.
- You can also make this in an air fryer. Preheat, then lay the carrots down in an even layer, leaving space for air flow. Air fry at 380F for 10-12 minutes, stirring/flipping halfway through.
