Truffle Fries

This truffle fries recipe transforms a simple bag of frozen French fries into a gourmet appetizer or the perfect upscale side dish. The truffle oil infuses each bite with a rich umami aroma, while freshly grated parmesan adds a final touch of savory saltiness. It's restaurant-worthy yet incredibly easy to make at home. Who doesn't like a quick, easy, and delicious side dish?

When eating out, if parmesan truffle fries are on the menu I always tend to gravitate towards them. They always seem like an indulgent treat, but now I love making them at home. They are easy and I can control the truffle flavor with how much truffle oil I add.

Truffle oil can be pricey, but a little goes a long way, so a small bottle will last quite a while. Truffle oil comes as either black truffle oil or white truffle oil. White truffle oil has a more delicate flavor/aroma and I think it pairs best with French fries. What do you prefer? Let me know in the comments below.

When picking out a truffle oil check the ingredients on the back. Many truffle oils get their flavor and aroma through synthetic compounds or a mix of synthetic and real truffles. I was able to find one that only uses truffles to infuse the flavor, but use what you can find.

Equipment for Making Truffle Fries

The equipment you need really comes down to how you make your French fries. If I'm doing a large batch, then I prefer to use a large sheet pan, and bake the fries in the oven. If I'm doing a smaller batch, then I prefer to use my air fryer. I have a Casori 5Qt air fryer and a Bella Pro Series 8Qt, both of which I am very happy with.

Ingredients Needed to Make Truffle Fries

In this recipe I use a bag of frozen French fries. It's so easy, and there really aren't any added ingredients if you choose the right brand.

Once you cook the fries, garnish with truffle oil (the star of the show) to give the fries that indulgent truffle flavor and aroma. The savory saltiness comes from added salt, and freshly grated parmesan cheese. Fresh parsley adds a pop of color.

I've included a garlic aioli dipping sauce in case you want to try something different, but of course these are great with ketchup too! For the aioli we use mayonnaise for the base, then flavor with garlic powder, salt and pepper, and a little fresh lemon juice for brightness.

How to Make Truffle Fries

First off, start with the garlic aioli if making. The longer the flavors have to meld, the tastier it will be.

Garlic Aioli

Combine mayonnaise, lemon juice and garlic powder in a small bowl and mix well until completely combined.
Taste and add salt and pepper to your liking.
Set aside to rest in the fridge for 30 minutes while you make the Truffle Fries.

Truffle Fries

Bake your fries according to the instructions on the bag. You can do this in an oven which is the conventional way, but you could also make them in an air fryer. For air fryer instructions you can check out my Air Fryer French Fries recipe.
While fries are baking get your parmesan shredded, and parsley chopped.
Once you finish baking the fries and they are golden brown, remove from oven and immediately toss in a large bowl with the salt, truffle oil and and half the parmesan.

Place fries on a serving platter and garnish with the other half of parmesan and all the chopped parsley.

Notes

  1. If you prefer to make your own fries from scratch, follow your recipe to make French fries and then start at Instruction #2 - getting the parmesan shredded.
  2. Remember a little truffle oil goes a long way, so you can add a little less than the 2 teaspoons specified and add more if you like after taste testing.
  3. Be careful when you add truffle oil to the fries - you don't want to drench some fries while others get none. Try to shake droplets onto the fries, or get the oil on the sides of the bowl and shake the fries around to pick up the oil.

FAQs

How do I store leftover truffle fries? Truffle fries are best eaten right away while they are hot. But if you have leftovers, you could store them in an airtight container in the fridge for up to three days. You may want to remove the parsley and add fresh parsley once reheated. When reheating you can use a conventional oven at 400F for about 5 minutes or the air fryer at 380F for 3 minutes. You may end up with melted parmesan if you leave it on, and the truffle aroma may evaporate in the oven when you reheat them. You could add more parmesan once reheated and more truffle oil if you feel it needs it.

Ingredients
