Hot Honey Carrots

Tender carrots, lightly seasoned and tossed in melted butter and hot honey, then roasted to bring out their natural sweetness. These hot honey carrots pack just enough zing to liven up your veggie routine. Ready in under 30 minutes, this easy side dish comes together quickly – let the oven do the rest.

Keeping a few go-to side dish recipes in your back pocket is the best way to make sure veggies never feel like an afterthought. Once you try these hot honey carrots, I hope they earn a spot in your regular rotation. They’re healthy, full of flavor, and pair beautifully with mains including my meatloaf, hot honey salmon, or bang bang chicken skewers.

Equipment Needed

Another recipe here that doesn’t require any unusual kitchen gadgets. A good sheet pan, and parchment paper to make clean up so much easier. If you don’t already have a mixing bowl, these glass mixing bowls are great.

Ingredients for Hot Honey Carrots

Fresh carrots – the star of the show. Don’t use frozen or canned carrots as they will not roast well.
Melted butter – adds richness and a subtle nutty flavor, also encourages browning during roasting. Could replace with olive oil if you prefer.
Hot honey – provides a subtle sweetness and a little fiery kick
Salt, pepper, garlic powder, and onion powder – for seasoning the carrots
Extra chili pepper flakes – if you like it hot (optional)
Fresh parsley to garnish (optional)

How to Make Hot Honey Carrots

Preheat oven to 425F.

Line a baking sheet with parchment paper and set aside.

Peel and cut carrots on the diagonal ½” thick. Set aside.

Melt butter in a large mixing bowl in the microwave for abut 15 seconds. Add in the hot honey, and all the seasonings. Mix with a spoon.

Add in the cut carrots and use the spoon to coat all the carrots evenly. If the butter has hardened up you can microwave the whole bowl including the carrots for 20 seconds to remelt the butter.

Dump the seasoned carrots onto the prepared baking sheet. Spread carrots out evenly so that they aren’t too close together. Roast in the oven for 20 minutes, stirring and flipping them about halfway through.
Finish off under the broiler for 5 minutes to get a little crispy char. Keep an eye on them constantly as they can burn very quickly when under the broiler.

Notes

  1. Feel free to drizzle a little extra hot honey over the roasted carrots in the serving bowl if you like.
  2. Add a little richness by crumbling in some feta cheese or goat cheese after roasting.
  3. Prefer a simpler flavor? Just stick with salt, pepper, and hot honey, and skip the additional seasonings for a more carrot-forward dish.

FAQs

  1. What if I only have honey – can I still make hot honey carrots? You could use the honey in place of hot honey and add 1/4 teaspoon of chili flakes to the seasonings (or less/more depending on your desire for spiciness).
  2. Can I use an air fryer for this? Yes, if you use an air fryer, preheat then lay the carrots down in an even layer leaving space for air flow. Air fry at 380F for 10-12 minutes, stirring/flipping halfway through.

Instructions
 

  • Preheat oven to 425F.

    We LOVE cooked carrots but I have never used hot honey before. This was awesome. We added a little extra to our own plates. Such a great addition!
